What rights do these No Trespassing signs give me?

They clearly state public law and inform trespassers that they will be treated as a threat to your life and property.
If I were to have these signs posted on all sides of my property and have my property also surrounded by a fence and bamboo with the only entrance being through a gate, any person on my property would be clearly trespassing unless they had written permission from me to be on my land.
Does this mean I would be able to shoot them?
Answers:
You can't shoot people just for trespassing. Unless there is an actual threat to your own life or safety or the life or safety of another, you can't use deadly force. You can have them removed from your land, arrested, or sued.
It doesn't matter what you put on your signs, you don't make the law. And the law says that unless you have rational belief of a threat (Which you wouldn't, hard as that may be for you to understand), you cannot use force.

You could be charged with a crime if all they were doing was trespassing. But if you do shoot them, and have a good follow-up strategy, you can do whatever you want to.
Firearms laws are so strict these days, you probably wouldn't be able to shoot them. You should check with the NRA. They should know the laws in your area, or be able to direct you to someone who knows the local laws.
We have the signs simply to protect our liability, but I don't know if it would be enough to help us in court God forbid someone did hurt themselves on our property.
The government just passed a law awhile back called'' No-retreat''which means if someone is there to harm you ,you can do whatever it takes to stop them.The old law said you had to shoot someone in your house but now I think you can on your property if they show aggression toward you.Check into it first,shooting someone is something you have to live with the rest of your life,Believe me it is not easy.Even in war.

Seriously though, a person just trespassing upon your property is not enough justification to shoot them.
Also, laws vary state to state on what "self defense" means and under what conditions it can be applied. Do research for the laws where you live.
Even with your additional details, you still cannot shoot anyone under those circumstances.
You can only use deadly force on someone who is an actual and imminent threat to your or your family's lives, and you cannot automatically assume someone is such a threat just because they are on your property. If you shoot someone under those circumstances, you will be in a world of hurt when the authorities catch up to you.
And, there is no jurisdiction anywhere in the US that allows you to use deadly force solely to protect your property or possessions. If someone is stealing your pickup truck from under your nose, and you shoot them, you will again be in a world of hurt.
